Previous studies have shown that eating more seafood was associated with a reduction in all causes and CVD-related mortality.

Seafood is known to contain the following:

heart-healthy omega-3 fatty acids and omega-6 fats

Iron

Iodine (during pregnancy)

Choline

Based on information published by the FDA, Choline, for example, supports the development of the baby’s spinal cord. The iron and zinc found in fish help to support children’s immune systems. Protein, vitamin B12, vitamin D, and selenium are also other sources of nutrients derived from fish. Nonetheless, many people choose to limit their seafood consumption because of fear of mercury exposure from seafood.

Most Common Way People Are Exposed to Mercury
According to EPA experts, the most common way people are usually exposed to methylmercury is when they eat certain kinds of fish and shellfish that have high levels of methylmercury in their tissues.

It’s believed that almost everyone has at least small amounts of methylmercury in their bodies, reflecting the widespread presence of mercury in the environment.

The U.S. Centers for Disease Control and Prevention (CDC) data show that most people’s blood mercury levels are below levels associated with possible health effects. Methylmercury, however, is a strong neurotoxin, and people exposed to high levels may experience negative health effects.

Possible symptoms of methylmercury poisoning, according to the experts, may include:

Loss of peripheral vision

"Pins and needles" feelings, usually in the hands, feet, and around the mouth

Lack of coordination of movements

Impairment of speech, hearing, walking; and/or Muscle weakness

Effects on Infants and Children

Pregnant mothers can expose Infants in the womb to methylmercury if they eat fish and shellfish that contain methylmercury. This exposure can negatively affect the unborn infants' growing brains and nervous systems.

Methylmercury exposure by pregnant mothers can adversely impact children's cognitive thinking, memory, attention, language, fine motor skills, and visual-spatial skills.
The Dietary Guidelines for Americans recommend eating fish as part of a healthy eating pattern.

The following are the recommended guidelines:

At least 8 ounces of seafood (less for children) per week based on a 2,000-calorie diet.

Those who are pregnant or breastfeeding should consume between 8 and 12 ounces per week of a variety of seafood from choices that are lower in mercury.

shmlmcfrln0@gmail.comhttp://www.blogger.com/profile/09415706108592410335noreply@blogger.com0tag:blogger.com,1999:blog-1390676736543124450.post-29552577876382596122022-04-16T17:10:00.002-07:002022-04-23T12:06:02.091-07:00This is One Scary Thing You Should know About These Fish?

Growing up, I have always enjoyed fishing, and so do most people in Jamaica. I think it’s fair to say that most people who live in the tropics or close to the ocean or any body of water with fish enjoy fishing. Ironically, there are certain fish that are known to have caused poisoning. However, those are the fish that some people enjoy hunting. As you can see in this video, these spearfishers --- although they speared other fish --- were fishing mainly for barracudas.

You can get ciguatera fish poisoning by eating fish contaminated with toxins produced by tiny algae found around coral reefs in tropical and subtropical climates. However, it’s believed that the poison does not affect all reef fish and deep-sea fish, such as tuna and wahoo.

Nonetheless, it is not always easy to determine whether a fish is contaminated or not, as the toxins that cause ciguatera do not alter the appearance, taste, or odor of the fish. Also, cooking does not get rid of the toxins.

Ciguatera can accumulate in smaller reef fish, then pass on to bigger reef fish that eat these smaller fish. For this reason, you may want to avoid fish such as barracuda, moray eel, grouper, amberjack, sea bass, sturgeon, parrot fish, surgeonfish, and red snapper. The liver, intestines, eggs, and head of these fish especially have the highest concentration of toxins.

As I watch these different spearfishing videos, sometimes I hear some of these divers questioning the possibility of these barracudas being poisonous, in particular the much larger ones. However, they say that because flies or other small sea insects(on their bodies)are not avoiding them, that’s usually a clear sign that those caught are not poisonous.

Source: Center for Disease Control(CDC)
shmlmcfrln0@gmail.comhttp://www.blogger.com/profile/09415706108592410335noreply@blogger.com0tag:blogger.com,1999:blog-1390676736543124450.post-75816441974498237052022-04-13T22:36:00.002-07:002022-04-16T07:30:30.338-07:00Awesome Skin Care Tips - A Cheaper and Diet-Friendly Approach to a Healthier Skin

No doubt, the beauty and cosmetics markets are booming globally. Many people in the US and abroad have been spending a large percentage of their earnings on skincare products when the simple solution to some skin issues they are trying to correct doesn’t really come in bottles, vials, or jars. In other words, sometimes, the solution to certain skin issues can only be fixed by a simple change in your diet, not with skincare or cosmetic products.

For those of you who might have been using certain skincare products for a very long time to take care of skin issues, this is particularly for you. If you have been struggling with:

Rough - dry skin

Inflammation of the skin

Frequent cracks occurring at the corner of the mouth

Rough, scaly skin

Slow healing of wounds, and other skin problems, but haven’t experienced any changes. Has it ever dawned on you that it could be a dietary-related issue, specifically, Vitamin or minerals deficiency related?

Based on findings, here are some of the reasons for the following skin conditions:

1. Rough -dry Skin
Some excellent sources of vitamin A are:

Milk

Cheese

Eggs

Liver

Yellow/dark green fruits, and vegetables.

If you haven’t been consuming sufficient vitamin A in your diet, this could lead to a deficiency in vitamin A, which could lead to rough-dry skin, among other symptoms.

2. Rough Scaly Skin

Rich sources of Vitamin C(Ascorbic Acid) include the following:

Fruits and vegetables

A deficiency in Vitamin A may lead to rough, scaly skin and other conditions.

3. Inflammation of the Skin

Some excellent sources of Vitamin B2(Riboflavin) are:

Eggs

Milk

Leafy green vegetables

Whole grain

Lean meats

Dried peas & beans

4. Frequent Cracks at the Corner of The Mouth

One of the reasons for this condition is also due to a deficiency in Vitamin B2(Riboflavin)

5. Slow Healing of Wounds and Other Skin Problems

This could be related to a deficiency in the mineral, Zinc. Some excellent sources of Zinc (Z )include:

Milk

Seafood

Whole grains

Nuts

Eggs

Dried beans

Always seek professional advice, anytime you are having second thoughts. If you have been using a particular product for an extended period (way beyond the time you were told that you would have experienced some result) but have not seen any result. It’s time for you to see your doctor or skin care professional. However, the bottom line is that it’s extremely critical that we pay close attention to our diets.

shmlmcfrln0@gmail.comhttp://www.blogger.com/profile/09415706108592410335noreply@blogger.com2tag:blogger.com,1999:blog-1390676736543124450.post-61194541566174283542022-04-04T22:01:00.015-07:002022-04-06T09:44:11.097-07:00Chili Peppers Are Too Spicy - Should You Really Be Eating Them?

Why Chili Is So Spicy

Capsaicin is a hydrophobic compound produced by the plant genus Capsicum and gives chili peppers their spicy taste.

This spicy compound acts as a deterrent against the consumption of the plant by mammals (including humans) and prevents fungal infections caused by insects.

Capsaicin irritates the human oral cavity, producing thermal (hot) and nociceptive (burning or stinging) sensations.

There has been increasing evidence to support the role of the TRPV1 receptors (also known as the capsaicin receptors) in the process by which symptoms of FGID(Functional Gastrointestinal Disorder) are developed, based on findings.

What are Receptors

Receptors are large protein molecules. Receptor sites can be found within the plasma membrane of a cell, which acts as a boundary between the cell’s internal and external environment.

The term “receptors” implies that they “receive” chemical information from other molecules such as drugs, hormones, or neurotransmitters – outside the cell. Receptors can be natural or artificial.

1. These outside molecules with this chemical information bind to receptors on the cell, causing the receptors to be activated.

2. A biochemical or electric signal is now generated inside the cell.

3. This generated signal then makes the cell do certain things such as making us feel pain, burning sensation, etc.

Burning Sensation In The Gi-Tract
It’s believed that the capsaicin receptors are involved in the pathogenesis of burning and pain symptoms in the gastrointestinal tract.

However, recent small studies have allegedly demonstrated that the chronic use of capsaicin-containing chili can decrease heartburn and abdominal pain in GERD(gastroesophageal reflux disease) and Dyspepsia, respectively.

In addition, the ratio of the prevalence of heartburn/regurgitation symptoms in the population is lower in several parts of Asia, according to the source of this post. It’s believed that this lower rate may be related to the high prevalence of chili or spicy food.

The writer(s) states that preliminary studies support the role of desensitization of capsaicin receptors by chili, a natural capsaicin receptor agonist, for the treatment of Functional Dyspepsia and NERD(Non-erosive Reflux Disease). However, more research studies are needed to confirm this idea.

FYI:
Receptor Agonist

It’s a chemical that binds to a receptor and causes it to activate and produce a physiological response. Agonists can be natural or artificial.

Desensitization is the diminished sensory response to an unpleasant stimulus after repeated exposure to that stimulus.

Desensitization may be the result of a strong or repeated activation of nociceptors (pain sensation receptors), which will eventually develop a loss in sensitivity to an irritant. However, there are also other ways desensitization can occur.
....Post Source:- <span style="font-family: "Times New Roman"; font-size: 15pt; font-style: italic; white-space: pre-wrap;">https://www.ncbi.nlm.nih.gov/

CHILI - FROM SOIL PREPARATION, PLANTING, HARVESTING, AND FINISH PRODUCTS(CHILI SAUCE AND CHILI POWDER). Secondly, I would like to know which of you likes fishing the way I do? I know some of you enjoy fishing a lot, but not all of us love to fish for the same type of fish. For example, I was up late last night fishing, but I was fishing for something somewhat different from the norm. I was fishing for information on FGIDs(Functional Gastrointestinal Disorders), and this is what I found.

FUNCTIONAL GASTROINTESTINAL DISORDERS

Approximately 25 million Americans experience a functional GI disorder based on one source. FGIDs account for 40% of a gastroenterologist’s practice. Although 50-80% of these individuals may take over-the-counter remedies and report remarkably higher rates of job or school absenteeism and disability, they do not see the doctor.

The writer went on to say that any section of the gastrointestinal (GI) tract, including the esophagus, stomach, and intestines, can be affected by FDIGs. They are functional disorders and not structural or biochemical abnormalities of the GI tract. It’s believed that the most common FGIDs are the following:

1. Irritable Bowel Syndrome (IBS) – is a change in bowel consistency coupled with abdominal pain that is usually relieved after a bowel movement.

2. Functional Dyspepsia – ulcer-like symptoms with upper-GI pain and a feeling of indigestion or symptoms of mild discomfort with fullness and possibly nausea immediately after eating.

There are allegedly three primary features listed for FGIDs; however, in this post, I will be focusing only on the role high-carbohydrate diets plays in FGIDs.
The Role of High-Carbohydrates

According to another source, the major types of carbohydrates in the human diet are:

Starches - wheat, rice, oat, potato, and corn

Sucrose(table sugar)

Lactose(milk sugar)

All the above have to be digested into monosaccharides (simple sugars or glucose) before being absorbed through the gut mucosa(inner lining of the intestinal tract).

If the complex carbohydrate (fiber and starch) and monosaccharides are not entirely absorbed into the small intestine, these substances will enter the large intestine. Here, they will be fermented or broken down by bacteria to produce gas and short-chain fatty acids (a result of the processing of fiber in your colon during digestion). Finally, this may contribute to the symptoms reported in patients with FGID, such as diarrhea, gas, bloating, abdominal discomfort, and pain.

HIGH- CARBOHYDRATE FOOD

Food with high-carbohydrate content may cause symptoms of functional bowel disorders by both allergic and non-allergic mechanisms.

NON-ALLERGIC MECHANISM

Incomplete absorption of carbohydrates in the small intestine, such as lactose malabsorption, may cause gastrointestinal symptoms. Lactose malabsorption in the small intestine is a common condition caused by reduced activity of the lactase enzyme.

Lactose intolerance is presented by abdominal symptoms (e.g., nausea, bloating, and pain) after consuming dairy products.

ALLERGIC MECHANISM

Regarding the allergic mechanism, the protein contents in the carbohydrate sources may cause allergic reactions to the gastrointestinal tract.

For example, in western countries where wheat is the primary source of carbohydrates, some people may experience gastrointestinal symptoms due to an allergic reaction to gluten, the major protein component of wheat.

Besides gluten hypersensitivity, wheat carbohydrates are also incompletely absorbed in the small intestine and may produce gastrointestinal symptoms.

Rice Versus Wheat and Other Carbs
According to this article, rice, in contrast to wheat and other sources of carbohydrates, is completely absorbed in the small bowel. There’s also very little intestinal gas produced after its ingestion. In addition, rice has been shown to have low allergenicity.

Furthermore, the fact that high fiber may worsen abdominal pain and bloating symptoms, it’s believed that rice may be the most suitable carbohydrate source for (FGID)functional gastrointestinal disorder patients with predominant symptoms of bloating and abdominal pain.

Another vital piece of information shared in this article is that (because) there have been reports of inadequate dietary intake for people with IBS due to food avoidance. Therefore, to address this dietary issue, the avoidance of poorly-absorbed carbohydrates combined with the consumption of well-absorbed carbohydrates or rice may be a more appropriate choice than the use of very-low-carbohydrate diets in the dietary treatment strategy for people experiencing IBS.

CONCLUSION

The conclusion made was that all together, rice may be the best source of carbohydrates for individuals with functional bowel disorder because of these three main reasons:

Its low allergenicity

It’s nearly complete absorption in the small bowel

Its low fiber content

Sources: 1)Med.UNC.edu (2)PubMed.ncbi.nlm.nih.gov
shmlmcfrln0@gmail.comhttp://www.blogger.com/profile/09415706108592410335noreply@blogger.com1tag:blogger.com,1999:blog-1390676736543124450.post-2894204929638553752022-03-26T15:41:00.003-07:002022-03-26T15:42:51.080-07:00 Self - Care - You Need to Know This

Though frequently used interchangeably, "salt" and "sodium" are not the same thing. For example, It’s not prudent to spend all your saving on skincare while ignoring your diet.

As it pertains to our diet, sometimes what we observe on the outer body, such as skin conditions, hair, and nail problems, are simply signs of protein deficiency, a manifestation of what is missing from the body.

Proteins are the main substances the body uses to build and repair tissues, such as:

muscles

blood

internal organs

skin hair

nails

bones

FYI: They are also part of hormones, antibodies, and enzymes + perform other functions.

They also help maintain the normal balance of body fluids and can be used as a source of energy if enough carbs are not available. Each gram of protein yields four calories of energy.

Main Sources of Protein

meats and alternatives

milk and other dairy products

Amino Acids
Amino acids are considered the building blocks of proteins. The human body uses 20 amino acids to make different types of protein.

Nine of the 20 amino acids are called essential amino acids because the body cannot manufacture them. The other 11, termed nonessential amino acids, can be produced by the body.

All amino acids must be present simultaneously for the body to function normally. Proteins that contain all the essential amino acids are known as complete or higher-quality proteins. These types usually come from animals.

Essential Amino Acids:-

Histidine

Isoleucine

Leucine

Lysine

Methionine

Phenylalanine

Threonine

Tryptophan

Valine

Nonessential Amino Acids:

Alanine

Arginine

Asparagine

Aspartic acid

Cysteine

Glutamic acid

Glutamine

Glycine

Proline

Serine

Tyrosine

FYI: Protein deficiency is not a problem in the typical diet.

Two glasses of skim milk combined with about four ounces of poultry or fish meet the daily protein requirement.

Vegan Diets
Protein deficiency could be a concern in some vegetarian diets. The reason for this is because vegans rely primarily on foods from the bread group, cereal, rice, pasta, fruits, and vegetable groups, and avoid most foods from animal sources found in milk, yogurt, cheese, and meat groups,

The 4 Basic Types of Vegetarians
Vegans - Consumes no meat, fish, eggs, dairy products, or food from animals.

Ovo-vegetarians - consume eggs but no animal-based food.

Lacto-vegetarian - consume dairy products, but no meat, eggs, poultry, or fish.

Ovolactovegetarians - consume dairy products and eggs, but no meat, poultry, or fish.

FYI: Vegans, in particular, must make sure they consume protein foods that provide a balanced distribution of essential amino acids, such as grain products and beans.

Supplement for Strict Vegans
Strict vegans also need a supplement of vitamin B12. Unfortunately, This vitamin is not found in plant foods, and its deficiency may lead to anemia and nerve damage.

Vegetarians who do not select their food combinations properly may develop nutritional deficiencies of protein, vitamins, minerals, and even calories.

Conclusion
Like you cannot construct a firm house without blocks, you cannot build a strong body (muscles, hair, bones, nails, organs, etc.) without proteins. However, like any other nutrients, consuming above the daily recommended amounts of protein for an extended period comes with risks.

shmlmcfrln0@gmail.comhttp://www.blogger.com/profile/09415706108592410335noreply@blogger.com0tag:blogger.com,1999:blog-1390676736543124450.post-36871518219670422302022-03-06T23:02:00.003-08:002022-03-07T18:53:14.259-08:00A Ketogenic Diet Plan - Read This Before You Start

Out of curiosity, you may have asked yourself the question, what is the ketogenic diet? Well, the above diet is hailed by some weight watchers as a safe and effective way to lose fat but is considered by many experts as one of the many extremes of dieting that is unsafe to your health.

Many professional organizations have argued strongly against certain dietary practices, particularly the extremes of fasting and the low-carbohydrate, high-fat, and high-protein diets. These practices, in particular, are a major concern to those who work in the fields of sports medicine and athletics, where reports consistently document that athletes frequently exhibit bizarre and often pathogenic weight-control behaviors, according to findings.

Ketogenic Diets
With ketogenic diets, the emphasis is primarily on carbohydrate restriction while generally ignoring the total caloric content of the diet. Those in favor of these diets believe that the body will use up significant lipids for energy with dietary restrictions of carbohydrates. This leads to an excess in the plasma ketone bodies(byproducts of incomplete lipid breakdown resulting from inadequate carbohydrate catabolism) that supposedly suppress the appetite.

The ketones that end up in the urine represent unused energy, the elimination of which further contributes to the weight-loss effort. Some extremists firmly believe that this energy loss is so great dieters can consume all they wish as long as carbohydrates are restricted. It's believed that at best, the energy lost by urinary excretion of ketones probably equals only 100 to 150 calories a day.

However, contrary to the above belief, some experts contend that this would account only for a small weight loss of approximately 0.45kg per month --- not very appealing when the major source of food is a liquid intake that may be as high as 70% of the calories consumed. Also, any initial weight loss may be due largely to dehydration caused by an extra solute load on the kidneys, increasing the excretion of water. Such water loss is of no lasting significance in a program designed to reduce body fat.

Studies have shown that low-carbohydrate diets can also potentially result in a significant loss of lean tissue, as the body mobilizes amino acids in muscle to maintain blood glucose by gluconeogenesis. This is certainly an undesirable side effect of a diet designed to speed up body fat loss.

Based on findings, compared to a standard, well-balanced, low-calorie diet, the ketogenic diet offers no advantage in aiding in the loss of body fat. It has been argued that this diet is potentially hazardous in several ways. It can cause the serum uric acid levels to rise; alter electrolyte concentrations, initiating undesirable cardiac arrhythmias; cause acidosis; aggravate kidney problems due to the extra solute burden placed on the renal system; raise blood lipids; exhaust glycogen reserves to contribute to a fatigued state, and cause relative dehydration. This diet is definitely contraindicated during pregnancy because dietary carbohydrate is essential to fetal development.

Conclusion
The ketogenic diet is just one example of the extremes of dieting; Presently, the extremes of dieting are insurmountable in the weight loss arena. The extent to which some people are willing to lose weight is unbelievable. However, most weight loss approaches, such as the carbohydrate restriction diet, are certainly not safe, based on the negative health issues mentioned above that may result from such a diet. So, again, a better approach to dieting is to consume well-balanced, low-calorie diets along with regular exercise.
shmlmcfrln0@gmail.comhttp://www.blogger.com/profile/09415706108592410335noreply@blogger.com0tag:blogger.com,1999:blog-1390676736543124450.post-86925068889564621172022-03-05T17:48:00.004-08:002022-03-06T08:09:19.844-08:00 Vegetarian Diet for Cats - You Be The Judge!

Vegan Diet

Our pets are a part of the family, so when we make adjustments to our diets for the sake of better health or beliefs, we have to do the same for them too. Some vegetarians, for example, may decide to feed their cats vegetarian diets as opposed to meat, a decision primarily based on ethics or morality. Others do it because they feel that it's a healthier choice overall.

In one study, 75% of the owners feeding their cats a vegetarian diet considered the diet beneficial for decreased risk of cancer, healthy coat, longevity, weight control, reduced risk of allergies, etc.

However, the question here is which diet is really healthier for your cats, meat-based or plant-based?

Cat - Obligate Carnivore

The domestic cat, Felis cactus, is considered an obligate carnivore. When this happens, the animal's muscle becomes very thin and weak, preventing the heart from pumping the body's required blood and oxygen supply. Insufficient taurine can also cause severe eye problems in cats, including blindness.

<span style="font-family: Arial; Despite all of this, unfortunately, a vast majority of the conversations, suggestions, and recommendations currently available as it relates to staying healthy, pretty much have nothing to do with diet.

In my opinion, I think consuming the right diet is critical in keeping the immune system in top shape so that it can aggressively fight back at daily environmental assaults on the body, these seasonal viruses, and more importantly, the Covid virus.

Several scientific publications agree that consuming a variety of anti-inflammatory food daily can not only provide the body with antioxidants but can also do the following:

Provide(phytochemicals)bioactive plant chemicals in fruits, vegetables, grains, and other plant foods that may provide numerous desirable health benefits.

Inhibit inflammatory signals caused by the immune system.

Provide fibers that can prevent cellular stress(A wide range of molecular changes that cells undergo due to environmental stress, including temperature extremes, exposure to toxins, mechanical damage, viral infections, etc.)

Promote healthy gut microbiota(A complex and dynamic population of microorganisms usually found in our GI tract) and more.

An anti-inflammatory diet is recommended as a remedy to fight inflammation in the body. Although its side effects are unpleasant, inflammation is a healthy response by our immune system to viruses, bacteria, toxins, or an injury.

Inflammation becomes harmful when it is long-lasting and begins to damage healthy cells, creating a pro-inflammatory state.

What An Anti-Inflammatory Diet Really Is
An anti-inflammatory diet does not follow any strict rules; neither is it based on calories or portion sizes. Instead, it suggests a variety of anti-inflammatory foods to consume daily.

This approach ensures a greater variety of protective food components, some of which may work together to boost immunity.

Anti-Inflammatory Foods
Below is a list of foods that are among those foods that should be included in an anti-inflammatory diet:

Tomatoes

Olive oil

Green leafy vegetables -spinach, kale, and others

Nuts - walnuts, almonds, and others

Fatty fish - salmon, mackerel, tuna, and sardines

Fruits - strawberries, blueberries, cherries, and oranges

Our diet is considered the main force behind the shaping of the gut microbiota throughout our lifetime. It’s important to note that altered gut bacteria composition has been associated with the pathogens of several inflammatory diseases and infections. This further supports the importance of an anti-inflammatory diet.

shmlmcfrln0@gmail.comhttp://www.blogger.com/profile/09415706108592410335noreply@blogger.com0tag:blogger.com,1999:blog-1390676736543124450.post-43882846169876963382021-12-03T14:25:00.003-08:002021-12-03T14:25:47.625-08:00Do This To Decrease The Loss of Vitamins During Cooking

The body does not manufacture most vitamins. The only way these vitamins can be obtained is only through a well-balanced diet. However, cooking can destroy some of the vitamins in our foods. Water-soluble vitamins like vitamin C and B vitamins seem to be the most vulnerable to degradation in cooking.

Microwave Or Steam

Although cooking helps to break down the thick cell walls of many plants, releasing the nutrients stored in them, which is actually suitable for stews and soups.
If you are not cooking soups or stews, to minimize the loss of vitamins during cooking, natural foods should be microwaved or steamed rather than boiled in water that will be eventually thrown out later.

Raw Vegetables Versus Cooked Vegetables
Many people believe raw vegetables contain more nutrition than cooked vegetables, but not in all cases; it depends on the type of nutrient. For example, when researchers analyzed the plasma of people in one study, they found that those who ate a raw food diet had higher levels of beta carotene, but their plasma lycopene levels were well below average. That’s likely because fresh, uncooked tomatoes actually have lower lycopene content than cooked or processed tomatoes.

shmlmcfrln0@gmail.comhttp://www.blogger.com/profile/09415706108592410335noreply@blogger.com0tag:blogger.com,1999:blog-1390676736543124450.post-52880041865742765542021-11-14T17:23:00.003-08:002021-11-14T18:29:38.126-08:00The Jalapeno Challenge is Real - Here is The Trick To Master it

Like a circus moving from town to town, the Jalapeno crave is going around. Since my mission is to use this blog to share the following:

1. What I know about cooking in general

2. How our particular food can help us to be healthier and even live longer.

I have been spending a lot of time discovering more about the negative and positive consequences of eating certain foods.

Surprisingly, in one of my research, I have discovered the formation of cancers and the foods that can help prevent these most feared diseases from forming or even taking over our bodies!

Although researchers believe consuming food rich in antioxidants, vitamins, and minerals (selenium) can help protect the body from oxygen-free radicals. In this article, I will be focusing only on antioxidants and their mechanisms of action in cancer prevention.

First, we will look at the “bad guys” known as Free Radicals ( the guys to be blamed for cancers). We will then look at “good guys” called Antioxidants (some of the main guys known for defeating these “bad guys”) and the usual strategies used to defeat them. Finally, you will be provided with some examples of foods rich in antioxidants.

What are Free Radicals?

During metabolism, most of the oxygen in the human body is converted into stable forms of carbon dioxide and water. However, a small percentage usually ends up in an unstable condition known as oxygen free radicals, which are thought to attack and damage the cell membrane and DNA, leading to the formation of cancers.

What Are Antioxidants?

They are cancer-fighting agents.

How Do Antioxidants Work?
Antioxidants absorb free radicals before they can cause damage, and they also interrupt the sequence of reactions once the damage has begun.

What Are Some Good Sources of Antioxidants?

1. Polyphenols are potent cancer-fighting antioxidants found in fresh fruits and vegetables, many grains, and green tea. For example, the antioxidant effect of one of the polyphenols in green tea, epigallocatechin gallate, or EGCG, is believed to be at least 25 times more effective than vitamin E and 100 times more effective than vitamin C at protecting cells and the DNA from free radical damage. Damages caused by free radicals may result in diseases such as cancer, heart disease, and others. For example, it has been said that EGCG is twice as potent as the red wine antioxidants resveratrol that helps prevent heart disease.

Polyphenols are known to do the following:

Block the formation of nitrosamines and quell the activation of carcinogens(a substance that helps to cause cancer)

Turn off the formation of cancer cells

Increase the body’s natural detoxification defenses and thereby retarding the progression of the disease.

2. Green Tea
Research findings have led some scientists to believe that green tea might be especially helpful in preventing gastrointestinal cancers, including those of the stomach, small intestines, pancreas, and colon. Consumption of green tea also has been linked to a lower incidence of lung, esophageal, and estrogen-related cancers, including most breast cancers.

Based on research, in Japan, for example, although people were found to smoke twice as much as people in the U.S, the incidence of lung cancer is surprisingly 50% less than that of the United States. Researchers believe this is since the Japanese drink green tea more regularly than people in the U.S. Therefore, to prevent cancer, it’s recommended that you drink two or more cups of green tea daily.

3. Phytochemicals
These chemicals are found in abundance in fruits and vegetables. It’s believed that they do exert a powerful effect on cancer prevention by blocking the formation of cancerous tumors and disrupting the process at almost every step of the way.
Bacillus Cereus is among some of the many species of bacteria that usually lurked around our home kitchens and other food handling or food preparation environment. Because this bacterium can cause severe illnesses, it’s of paramount importance that we know what steps to follow when handling foods. In this post, we will be particularly looking at the following:

Source of this bacterium

Illnesses this genus usually cause

Signs and symptoms of these illnesses

Recommended (USDA) primary & secondary medical interventions

Recommended temperatures that hot and cold foods should be kept

Bacillus Cereus
The bacterium Bacillus cereus, otherwise referred to as B. cereus, is a genus usually found in foods. It tends to multiply rapidly at room temperature and produces toxins that can cause several illnesses.

Sources
Foods that have sat out for an extended period at room temperature, particularly rice and other leftovers, are usually one of the primary sources of this bacterium. Sauces, soups, and other prepared foods can also harbor growth if they have sat out for too long at room temperature. Thus, prompt refrigeration or maintaining leftovers and other prepared food at the recommended temperature are essential.

Two Known types of illness Cause By B. Cereus
1. Diarrheal: characterized by diarrhea and abdominal cramps within 6-
15 hours.
2. Emetic toxin: characterized by nausea and vomiting with 30 minutes –
6 hours.

Immediate Response To Signs and Symptoms
A person who has been experiencing constant or prolonged diarrhea and vomiting secondary to consuming toxins produced by Bacillus cereus can become dehydrated very quickly. Thus, they must try to re-hydrate themselves as soon as possible by returning sufficient fluids to the body to compensate for that amount lost; If not, this can lead to a loss of electrolytes, sodium in particular, and an overall disruption of the metabolic process.

Based on the advice provided by the United States Department of Agriculture (USDA), one should drink plenty of fluids and get enough rest. However, if you cannot drink enough fluids to prevent dehydration, you should seek medical attention immediately.

Food Handling Recommendation
To reduce the risk of becoming ill from Bacillus cereus, hot foods should be kept hot (above 140°F). Similarly, cold foods should be kept cold (40°F or below). Cooked foods should be stored in a wide, shallow container and refrigerated as soon as possible. It’s best to refrigerate all leftovers within 2hrs.

Conclusion
Bacteria, in general, are not visible to the naked eyes; Usually, they can only be seen under a microscope. As a result, there’s no way for us to tell whether or not they are sitting in the foods we are about to consume. In fact, if this was the case, we could easily avoid becoming ill from Bacillus cereus.

Often, it’s only after we have gotten ill from eating a bacterium-infested meal that we have become aware of the fact that they were indeed present in our foods. For this reason, we should always try to practice safe food handling techniques, but more importantly, try our uttermost best to follow all the recommended precautionary measures provided by the USDA and other food safety-related agencies.
Many people have been switching to using margarine instead of butter to reduce their intake of saturated fats. But, now researchers are questioning how healthy a choice is margarine, even though it has far less saturated fat than butter.
Butter versus Margarine
Based on findings, the distinguishing characteristic between margarine and butter is not the caloric content, as they are about equal, but the composition of their fatty acids. About 62% of the fatty acids in the butter are saturated compared with 20% in margarine. During the manufacturing process of margarine and some other vegetable shortenings, unsaturated corn, soybean, or sunflower oil is partially hydrogenated---a process called hydrogenation wherein hydrogen is added to the oil.

This causes the chemical structure of the original polyunsaturated oil to be arranged to a liquid not found in nature that is more hardened (saturated) but not as hard as butter. When one of the hydrogen atoms along the carbon chain moves from its naturally occurring position(cis position) to the opposite side of the double bond that separates two carbon atoms (trans position), the restructured fatty acid is referred to as a trans unsaturated fatty acid. From 17 to 25% of the fatty acids in margarine are trans unsaturated fatty acids, compared with only 7% in butter fat.

The fact that margarine is made from vegetable oil, it contains no cholesterol; butter, on the other hand, is made from a dairy source and contains between 11 to 15 mg of cholesterol per teaspoon.
The current controversy over margarine versus butter centers on the possible detrimental health effects of trans, unsaturated fatty acids. A diet high in margarine and other foods containing partially hydrogenated vegetable oils increases LDL cholesterol concentration to about the same degree as a diet high in saturated fat. Unlike saturated fats, however, they also decrease the concentration of the beneficial HDL cholesterol. Thus Scientists estimate that the dietary trans unsaturated fatty acids do contribute to increased risk for heart disease.

Conclusion
Since there seems to be a controversy over whether a diet high in margarine can increase LDL cholesterol to approximately the same degree as a diet high in saturated fat, and that it may also cause a reduction of good (HDL) cholesterol, the best advice here is to use margarine in moderation. Better yet, instead of using butter or margarine, you can use olive oil to lightly sprinkle your toast and vegetable oil to cook or bake. You may also baste roasted food with tomato juice, pureed vegetables or fruits, in place of oil.

It's a fact that diseases or illnesses of the large intestine such as colon cancer and diverticula can be caused by a diet low in fiber. For this reason, we shouldn't be consuming foods just to satisfy our hunger but also to prevent the risk of both illnesses. If you have the tendency to eat a lot of processed or refined foods, for example, you should be aware that when foods are processed or refined, almost all of the natural fibers are removed. However, one dietary approach that we can take to reduce the risk of diverticula and colon cancer is to incorporate sufficient dietary fiber in our daily diets.

What is Dietary Fiber
Fiber is a form of complex carbohydrate. A high-fiber diet gives a person a feeling of fullness without added calories. Food rich in fiber includes starchy vegetables, fruits, legumes, whole grain bread, and cereals; because dietary fiber cannot be broken down by human digestive enzymes. Instead, it passes down the intestinal tract and adds bulk to the stool, which helps us to move our bowels. During the digestive process, it binds water to help produce softer, bulkier stools and aids in a more rapid movement of waste materials through the intestines. Thus, it plays a unique role in the digestive system. Therefore, it's quite normal for individuals who frequently consume a diet rich in fiber to experience easy bowel movements.

Diverticula
If a person's diet is low in fiber, during digestion, there won't be enough fiber to bind water. As a result, the stools will be hard. The formation of hard stools can create extra squeezing work for the large intestine. Over time, this excessive amount of squeezing can weaken the walls of the large intestine, leading to diverticula. Most typically, this occurs in the descending colon (which lies on the left side of the body). Diverticula can sometimes lead to lower GI bleeding and/or pain, classically in the left lower quadrant(diverticulosis). Diverticula can also become inflamed (diverticulitis)

The bladder is located next to the descending colon. Therefore, in severe diverticulosis, the diverticula can rapture and adhere to it, even creating a communication between the bladder and the diverticula. In addition, this colovesical fistula can cause pneumaturia (air in the urine) and fecaluria ( feces in the urine).

Colon Cancer
Studies show that cancer of the large bowel (colon cancer) is prevalent in economically developed countries such as the United States, Canada, and Western Europe. On the contrary, colon cancer is relatively rare in less developed areas of Africa, where the diet is usually lower in fat and animal protein and consists of high-fiber, unprocessed plant foods.

Although the recommended amount of fiber intake is about 25 to 30 grams per day. Most people in the United States eat only 10 to 12 grams of fiber daily. It's believed that simply increasing your daily intake of fiber, or in other words, eating more fruits, vegetables, legumes, grains, and cereals daily, can significantly reduce the risk of colon cancer, diverticulitis, and even breast cancer.

Patients undergoing Radiation
therapy for cancer have been known to frequently experience damage to
healthy tissues and several other side effects. However, based on a most recent
study featured in an academic journal, dated 10/16/13, cruciferous vegetables
such as cabbage, cauliflower, and broccoli is believed to contain an
anti-cancerous compound that can protect healthy tissues from radiation damage or decrease the side
effects often observed in cancer patients undergoing radiation therapy.

According to this group of researchers,
this anti-cancer compound that has been proven to protect rodents from lethal
doses of radiation has already been shown to be safe in humans. This compound they
call “DIM” has been studied as a cancer prevention agent for many years, but
this is the first indication that it can also act as a guard against radiation.

The typical side effects
observed in cancer patients who have received radiation therapy are usually a
reduction of- red blood cells, white blood cells, and blood platelets. However,
these scientists also found that mice treated with this anti-cancer compound
have shown less loss of the above blood cells and platelets.

A few years ago, another
compound was also discovered in cruciferous vegetables that allegedly improves
DNA repair in cells, which helps prevent them from becoming cancerous.

Definition of Cruciferous Plants

Cruciferous plants are those
that produce cross-shaped leaves. Other cruciferous vegetables not mentioned
above include Brussels sprouts and Kohlrabi. They have long been shown to contain
phytochemicals that appear to exert a powerful effect in preventing cancer
by blocking the formation of cancerous tumors and disrupting the process at
almost every step of the way. Unfortunately, although the recommended
daily consumption of fruits and vegetables is 5-9 servings, many of us have not
been eating this amount of fruits and vegetables --- especially cruciferous
vegetables --- on a daily basis.

As you can see, cruciferous
vegetables not only can help to protect cancer patients against the damage of
healthy tissues and other side effects of radiation therapy, they also play a significant role in reducing the risk of developing cancer.

Any blood-borne pathogen that can cross the placenta may infect an unborn baby. Deli meats, for example, have been known to be contaminated with listeria, which can cross the placenta leading to the infection of a fetus and consequently a miscarriage. Therefore it's recommended that all Deli meats be reheated to a safe temperature before being eaten (If you are pregnant).

Listeriosis is caused by Listeria monocytogenes, a
bacterium found in soil and water. It can be found on vegetables, meats, dairy products, and processed foods such as soft cheeses and in cold cuts. Thus, it's best to
always wash all vegetables, avoid unpasteurized dairy products, soft cheeses, and cold cuts, and cook meats

Toxoplasmosis

Fetal ToxoplasmosToxoplasmosis, the parasite Toxoplasma gondii, can also cause spontaneous abortion if a pregnant woman passes toxoplasmosToxoplasmosisfetus. You might ask yourself the question, how will this parasite be able to find its way into her body in the first place? The explanation is simple. Suppose a pregnant woman unconsciously or accidentally places her hands in her mouth (after gardening, cleaning a cat's litter box, or touching anything that has been exposed to the cat's feces)she can introduce the eggs of this parasite into her body.

Other foods can cause miscarriages, such as some fish used in sushi bars, raw shellfish, raw eggs, and more. Since restaurants don't usually cook or prepare separate dishes for pregnant women, you have to be careful with your food selection whenever you dine out, or it's best to try to design your own meals.

One final word of advice --- because pregnant women usually experience changes in metabolism and circulation which may increase the risk of food poisoning, infections, and consequently spontaneous abortion --- they should make it their duty to do their own research. This is just to confirm the following information shared above and have their health care providers further validate it.
globally. In the U.S. alone --- based on data from the Center for Disease
Control and Prevention (CDC) --- from January 1, 2009, through December 31,
2010, there were 1,527 foodborne disease outbreaks resulting in 29,444 cases of
illness, 1,184 hospitalizations, and 23 deaths. Of the 790 outbreaks with a laboratory-confirmed illness,
norovirus was the most commonly reported infection outbreak,
followed by Salmonella.

What is Salmonella

Salmonella is one of the most common causes of food
poisoning in the United States. It is usually caused by foods that include contaminated eggs, poultry, meat, unpasteurized milk or juice, cheese,
contaminated raw fruits and vegetables such as alfalfa sprouts and melons.
Other sources include spices and nuts. Usually, symptoms last for a few days, and
most people can recover without treatment. However, Salmonella can
cause more severe illness in older adults, infants, and persons with chronic
diseases.

Victims of Salmonella poisoning often experience symptoms ranging
from diarrhea, fever, abdominal
cramps, vomiting, and others, which can last anywhere From 4-7 days. If you are unable to receive
immediate medical attention, the advice is that you drink plenty of fluids
and get enough rest. Fluids will help to prevent dehydration due to
diarrhea. However, should your symptoms prevail or are severe, try to
see a doctor as soon as possible.

How to Protect Yourself Against Salmonella

You can protect yourself from becoming a victim of Salmonella food poisoning by following the USDA's, CDC's, and other related agencies' recommended cooking and pasteurization precautions. One of such recommendations is that you
should avoid eating high-risk foods, such as raw or lightly cooked eggs,

Did You Know This About Cancer?

When we prepare our meals, we shouldn’t only prepare food
just to satisfy our hunger. We should also try as much as possible to select
food items that are very nutritious and can help to reduce the risk of certain
illnesses, such as diabetes,
hypertension, cardiovascular diseases, cancer, and others. Because cancer is by far the most deadly of all medical conditions mentioned above, it’s of paramount importance that we fully grasp the
co-relations between nutrition and cancer and the actions we can take to
reduce the risk of becoming a victim of this illness.

Fighting Cancer

No doubt that the most effective approach in the fight
against cancer is health education, such as educating ourselves on the
importance of negative lifestyle modifications. Since nutrition is believed to
be one of the primary causes of cancer, in this post, we will be focusing mainly
on a few recommended dietary changes that can help tremendously to minimize the likelihood of developing cancer.

Recommended Dietary

The American Cancer Society believes that approximately
one-third of all cancers in the United States are related to nutrition. Therefore, it
suffices to say that a healthy diet can indeed play an essential role in reducing the
risk of cancer. Based on RDA(required dietary allowances) recommendation, the diet should be low in fat (particularly from animal
sources), high in fiber, and include a substantial amount of foods from plant
sources. Protein intake should be limited to the RDA guidelines, and the daily
consumption of cruciferous vegetables, fruits, and green tea is also
encouraged. Alcohol should only be consumed in moderation.

You shouldn't only learn how to cook and know
what food to cook. It's more important that you know what food items you should prepare
based on their nutritional value.

Selecting foods based on their nutritional value can be a
rather challenging task, primarily because of two reasons. First, there are many food items available to choose from, and of course, the prices vary. Secondly, the
nutrients differ from one food item to another. Despite this sometimes daunting
and time-consuming task, shoppers should always ensure they get the best
nutritional value for their money, not just a bargain.

When you are trying to decide on which supermarket you
should shop, you should ask yourself this simple yet very important question: "Will I be
able to get the best quality fruits, vegetables, and meats and a wide selection
of foods?" No doubt, this question should be sufficient to help you
with your final decision.

Last but not least, if you have a clear understanding or
meaning of a few key terms, this can also help make your food selection much more effortless. Once you are able to select the right food, ultimately, you will be

There are several common terms often used in cooking. The goal of this post is to provide you with a few of these terms along with their definitions:

Smoking

Smoking is cooking food indirectly in the presence of a
fire. This is done much more slowly than grilling. Meats that are less
tender benefit more from this method. Below are two different ways you can
smoke meats:

Smoking can be done in a covered grill with a pan of water placed beneath the meat or
poultry on the grill. This method allows a natural smoke flavor to permeate the
meat.

You may use a "smoker," which is an outdoor cooker especially designed for smoking
foods. The temperature in the smoker should be kept at 250 to 300 °F for
safety.

Pit Roasting

This is a technique used to cook meat in a large, level hole dug in the earth. First, a hardwood fire is built in the pit, with wood about 2½ times the volume of the pit. The fire is then allowed to burn
until it reduces to burning coals that
usually fill the hole halfway. It can take up to 4 to 6 hours for the hardwood to
reduce to coals.

Although it usually
takes approximately 10 to 12 hours for the meat to be cooked, it's not always
easy to estimate the time; This is due to factors such as the outdoor temperature at the
time of roasting, the size and thickness of the meat, the toughness of the
meat, and how fast the coals are burning. A whole pig, for example, would take
more time than one-half of a pig. For these reasons, a food thermometer is
essential to determine the meat's internal temperature for doneness and safety.

Grilling

To cook food by directly exposing it to an open flame or a
hot metal surface is called grilling.

Marinating

A marinade is a prepared savory sauce (a blend of different
herbs and seasonings) in which a food is soaked to enrich its flavor or to
tenderize it. Foods are to be marinated only in the refrigerator, not on the counter or anywhere else.

Braising

This refers to a technique used for roasting or simmering less-tender meats.
The meat is placed in a tightly covered pan with a small amount of liquid and
is allowed to roast or simmer.

Brown

First, a small portion of grease or oil is heated in a skillet or
pan, and the food is then added to it. Next, the meat -- or whatever the food is -- is
allowed to cook on both sides until brown in color. Browning adds not only
texture but also flavor to the dish.

Broil

To broil something is to cook it using the direct dry heat source of your oven.
You may also use a broiler pan. Commonly
broiled food includes lamb, steak, fish, chicken, etc., or in other words, meats,
poultry, and fish in general. However, some people broil fruits and
vegetables also.

Boil

This means cooking foods in liquid or water over a
fire. For example, boiling eggs, pasta, etc.

Bake

To bake means to cook food using dry heat, usually inside an oven. In some
cultures, slow-burning fire coals are placed on top and at the bottom of
the baking container.

first know what are some healthy foods, where and how to shop for healthy foods,
then finally, how to prepare healthy foods. The reason for saying this is
simply because even though you might purchase the healthiest food items, such
as a potato, it can be made unhealthy after it has been baked, by adding things
to it, such as sour cream, butter etc.

How to Shop Healthier

Have you ever taken the time to look at the way food items
are usually arranged in most supermarkets? If you haven’t, this is how they are
arranged most of the times:- When you enter a supermarket, the first thing you
will notice is that there are several rows of canned, frozen, and packaged
goods. These products are usually stocked in the center of the store.

What you will find along the walls are foods that have not
been highly processed such as meats, poultry, and fish; vegetables and fruits;
and milk and dairy products. Today, more
and more supermarkets are adding salad bars, that are also located close to
the walls. Unlike the foods located in the center of the store that generally
have a much longer shelf life, food items close to the walls not only have a
rapid turnover rate, they also required careful handling and refrigeration.

The question is now, how can this help you to shop healthier?
Well, the answer is simple; all you have to do to shop along the walls for
those foods that have higher nutritional value.
The reason they tend to be more nutritious is simply because they have
undergone minimal processing. After you have done this, you may shop throughout
the store to find just a few more processed foods that may needed to
complement a healthy diet.

Since most of us have taught
ourselves to cook, I know for sure that you don’t have to be a professional
cook in order to cook like one, or to cook healthy. In fact, most of the times, all it takes is just for you to be aware of the food items that are healthier
or more nutritious. Once you have healthier food items in your pantry or kitchen, as
opposed to unhealthy foods, you will be more inclined to cook healthier --- so
learn how to shop smarter. Finally, take the time to prepare your meal the
right way.
