Turban Squash
Like its namesake, the turban squash resembles a headdress. It thrives in well-draining soil and full sun, when planted in hills 6 feet apart. Its sprawling vines can run anywhere from 8 - 10 feet in length and produce an abundance of fruits with a hard, woody rind. It’s usually harvested when the leaves die, before the first frost.
Ways to cook Turban Squash
- Scoop out the seeds, cut off the skin, and try roasting it with olive oil and a pinch of salt.
- Boiled and pureed with beans into a soup.
- Remove the seeds, scoop out the cooked flesh, and put the skin aside. Mash the flesh with cheese, bacon bits, chestnuts, sauteed mushrooms, and chopped scallion, then put back into the skin. Stock cheese on top and put it back in the oven for about 15 minutes.
